Warrior: Cyclone Axe - PvE ownage in a can
Ranger: Cripshot (honorable mention Concussion Shot )
Monk: Healing Hands - No, not on a wammo. It used to awesome in HA.
Elementalist: Gale - Beautiful in its simplicity... and so powerful!
Necromancer: Spiteful Spirit - Best nuke in the game, by far.
Mesmer: Distortion - At least pre-nerf. Now it would have to be leech sig, I guess.
Assassin: Shadow of Haste - So awesome in fights that stress mobility (AvA, GvG)
Ritualist: no favourite here.
Dervish: Wild Blow... oh wait, that's a warrior skill? Well, it owns on a Dervish. If not, then Avatar of Grenth
Paragon: Energizing Finale - sooooo broken.

EDIT - Well...

Ranger: I'm not sure at all - I use too many builds with too many different skills. Needling Shot probably. Or Savage Shot.
Warrior: Flail (I hate warriors, but love this skill on a barrager or quick/needling shot ranger)
Monk: Unyielding Aura, of course. I never use it but I'd feel like a god if I did
Elementalist: Ward against Melee, probably
Necromancer: Order of the Vampire
Mesmer: Arcane Mimicry
Assassin: Aura of Displacement
Ritualist: Wanderlust (I almost never use this skill, but I still love it - I somehow really like Death Pact Signet as well)
Paragon: not sure - I haven't played enough with paras yet
Dervish: Elbon Dust Aura

My favorite skill is rez signet. Nothing comes close to its power (err Sunspear Rebirth Signet is better assuming you have it ).

Favorite skills by profession:

- Warrior: Toss up between Frenzy and Shields Up
- Ranger: Distracting Shot no question
- Mesmer: Crippling Anguish
- Necromancer: Faintheartedness
- Monk: Draw Conditions, but Mending Touch is a close second
- Elementalist: Gale
- Assassin: Twisting Fangs
- Ritualist: Mend Body and Soul
- Paragon: Stand Your Ground
- Dervish: Victorious Sweep
